Walking through the indigenous garden that cascades down the hillside below Ellerman House is one of the great pleasures of a stay in our enchanting oceanfront hideaway. The

salty sea breeze mixes with aromatic fynbos to produce a fresh, herbaceous scent that is unique to this part of the world; a trademark of the Cape Floral Kingdom’s extraordinary natural heritage.

Fynbos is also the inspiration behind our Botany Bay Gin, produced in collaboration with Inverroche – the pioneers of South African craft gin – and named after the craggy cove into which the Atlantic Ocean crashes below Ellerman House. The recipe was inspired by the fragrant plants growing in our garden – citrus and floral notes combined with subtle woody undertones that speak of this special place and showcase the craftsmanship of the master distillers.

This perfectly-aligned partnership between two luxury brands that celebrate the best of South Africa now extends to an exclusive new on-property experience: the Inverroche Gin Academy. Hotel guests are invited to take part in a bespoke gin distillation masterclass, blending their own selection of botanicals to create a custom spirit infused with layers of exceptional flavours and unique aromas.

Set in the Ellerman House Wine Gallery, this immersive experience also includes a gin tasting, cocktails and canapés on the terrace at sunset. The class itself is an intimate gathering, with just six seats made available at each of the weekly sessions.

Participants in the Inverroche Gin Academy experience at Ellerman House will take home an elegant bottle containing their own, one-of-a-kind gin, and the memories of an unforgettable evening bringing to life the spirit of our indigenous oasis at the foot of Table Mountain.
